There's a collection by Abel and Newlin called Scholarly Publishing:
Books, Journals, Publishers, and Libraries in the Twentieth Century
that Wiley published in 2002.  Of course that still leaves you short
by about 300 years!

David McKitterick has published what I believe is a two-volume history
of Cambridge UP.

Richard Sher has published The Enlightenment and the Book with the
Centre for the History of the Book in Edinburgh.  They list some
others that may also be useful:
