Different fields use different style guides and have different
conventions, so your observation that intermediate pages don't need to
be cited may be true for your field, but it's not true for mine. In my
field, if you directly quote from a source, you have to give the page
number(s) on which the quotation appeared. So page numbers other than
the first and last are indeed important.

The question addresses only one nuance - how to cite a correct page
for reference. But the answer is simple.
When we site an article, its first and last page suffice. No one cites
the intermediate pages in the article (as it is usually done in the
book). Sometimes an equation is quoted by its number and not by the
page it is on.
So if the first and last pages are available it is enough for all purposes.
